Where we are going.
BAGOLINO al Forno will become the most authentic Italian osteria in the Texas Hill Country — not by replicating Italy, but by importing the discipline of Italian craft into the daily rhythm of Lakeway life.
Over the next ten years, we will grow from a single wood-fired food trailer into a four-stage family enterprise: trailer, online Bottega, full restaurant, regional wholesale. Each stage funded by the one before. Each stage owned by the same six.
What we do every day.
Every morning, we open the trailer in Lakeway. Every morning, the dough has been resting since the night before. Every morning, the Bagòss is sliced fresh. Every morning, the family arrives together.
Our mission is to serve food that honors its origins — to know the name of every producer, to pay them fairly, to tell their stories on our menu, on our wall, in conversations across the counter.
Our Values
Six principles that govern every decision, from the kitchen to the table.
Famiglia Prima
Decisions are made together. Profits flow through the family. No outside investors. No silent partners. The six of us — signed, sealed, committed.
Origine
Every ingredient has a producer. Every producer has a name. Every name appears on our menu. Food that has no story has no soul.
Lentezza
Bagòss takes twenty-four months. Speck takes twenty-two weeks. Pizza dough takes seventy-two hours. We refuse the speed of fast casual. The food tastes like time.
Mestiere
The founder works the oven. Meryann works the books. The children learn by working alongside, not by watching from above. A craft handed down.
Onestà
Real producers. Real prices. Real Italian. If we cannot source it from Italy or from a producer we trust, we do not put it on the menu. Period.
Cielo
The horizon is long. We build for one hundred years, not one quarter. The decisions we make today must make sense to grandchildren we have not yet met.
