BAGOLINO al Forno operates under Monte Sarmiento LLC, a Texas family-owned limited liability company. The founder José Carlos and co-founder Meryann and their four children, agreed that decisions are made together at the family table. The Patto della Famiglia — our signed family covenant — lays out the promises each member makes to the others. This is the way we say: this is ours, together, for the long road.

Born in Guatemala, of Italian-Spanish heritage. Carries the vision and signs the work in the name of the family. Public face. Sales, marketing, legal, business development.

Co-founder. Runs operations and finance. Owns the daily rhythm of the business: bookkeeping, inventory, staff coordination. The reason the trailer opens every morning.

Seventeen. Studying marketing. The voice of BAGOLINO on social media. Owns Instagram, TikTok, content production. The bridge between the family business and the next generation.

Press relations, events, and the music of the space. Curates the playlist. Plans the events. Photographs the producers. The keeper of how BAGOLINO feels.
