The Bagolino 200
A Seat at the First Table
"Costruito con noi. Non per noi."
Built with us. Not for us.

A Family-First Capital Structure
Most restaurants raise from one or two investors who own a piece of the business and want returns on their schedule, not ours. We have chosen a different path.
The Bagolino 200 is a founding membership program. Two hundred people. One thousand dollars each. Two hundred thousand dollars of launch capital.
Non-dilutive. Not equity. A founding contribution in exchange for membership privileges that last as long as we operate. With 200 Founders, no one owns us. We answer to the family, to the Founders, to the customer at the counter — in that order. We never have to make a decision because someone needs a quarterly return.
200 × $1,000 = $200K
Non-dilutive. Family-friendly. Built for the long road. This is how the children inherit something they can run, not something they have to buy back.
For Your $1,000
Six tangible things. Two intangibles worth more.
Sigillo Card
A numbered, foil-pressed Sigillo gift card — physically engraved with your Founder number from 001 to 200. Lifetime credit balance for use at the trailer and Bottega.
Il Progetto Booklet
A printed 10-page booklet in Italian and English documenting the project from concept to launch. Signed by the founder. Numbered to match your Sigillo.
Founders Wall
Your name inscribed permanently on the Founders Wall — mounted inside the trailer at launch, and carried into the future restaurant whenever we build it.
Opening Night
An invitation for two to our private Opening Night dinner in September 2026 — before we open to the public. Six-course Italian dinner cooked by the founder.
Early Access
Founder-only previews of new dishes, seasonal menus, Bottega products, and event nights — always before public release.
Annual Bottega Box
Once a year, on the anniversary of launch, a curated Bottega box ships to your door — Bagòss, Speck, EVOO, a wine. The producers we love, on your table.
The knowledge that you helped a family open a business on terms that respect their family. And the standing invitation — the door is always open. Bring your family. Sit at our table. You belong here.
